The summer heat in Chicago is stifling. With temps to the 90s coupled by high humidity, it feels like we’re in the 100s. Indoors the temps are low and once you go out there, your body feels the blast of hot air immediately, like being in a furnace. So you try to walk faster to get to your destination quicker where you know there’s going to be a relief or shade yourself in the shadow of the skycrapers.
In this case cooking is the least in your mind.
This weekend, my former neighbor had a Hawaiian themed party. Her friends brought appetizers and Ginger mixed some pina colada. I brought a Hawaiian dish called lomi-lomi. In Hawaii, they would salt a salmon fillet overnight and then minced it. I was afraid my hostess is not into fresh fish so I saw a recipe using lox which works fine. Added some white and green onions, tomatoes and sea salt. It is simple and very fresh.
So this is my entry to the “Fresh” Daily Post Photo Challenge, lomi-lomi.
Ooops, I forgot to add red pepper flakes.
I just wilt in hot weather–but your Hawaiian salad looks fresh and cool!

I won’t go that far because kung malaking bangus at mataba, hindi ko ipagpapalit si bangus. But I love lox so it is really a great change.

I think you should try it as an appetizer during your bbq. All you need are plenty of tomatoes, sweet and green onions, pepper flakes, sea salt and of course the lox.

I am tempted, The Chef has a menu planned already, but I think
I have all the ingredients at home, except the green onions.
It is mouth-watering, No doubt the guests must have loved it.

Oh it will be something different. Just make a small batch. I removed the seeds of the tomatoes though so pick some fleshy ones.
